this might sounds stupid, but what do i gotta do to get my truck to billow out black smoke when i mash the accelerator?
also, what company makes a good single, passenger-exit stack exhaust?

In addition to making people hate diesels, black smoke from overfueling, that is overfueling itself, leads to high EGT's (Exhaust Gas Temperatures). This in turn leads to wonderful things happening to the "innards" of your engine, JohnnyRebel. Cracked exhaust manifolds and heads and, oh yeah, the highly desirable melted pistons:eek: :D !!
Those black-smoke belching diesel rigs you see on the cover of Diesel Power are highly modified engines using nitrous and water injection, obscenely high boost pressures, and are built expressly for 1/4 mile drags or sled pulling. They still run on the verge of melt-down (and sometimes do) doing this, and for the street, their owners seriously de-tune the chips and downloaders to keep them drivable. Not to mention the serious ($$$) modifications needed to the drivetrain to handle that power.
The 6.5 is not one of those 600+hp, 1200+lb/ft capable motors! It is; however, quite able to produce a reliable 300hp and 600lb/ft, enough to suprise and embarrass many vehicles at a stoplight.
To answer your stack question, try Heartthrob Exhaust's website for quality products for the 6.5 (including their new line of stacks), or check out the adds in Diesel Power.

what if you're getting black smoke and it's not on purpose?

Check your waste gate actuator and your air filter. Black smoke means there is too much fuel and not enough air. It's more likely that there is a restriction on your intake then there is a problem delivering too much fuel. Your waste gate should move freely when the engine is off and should be sucked into the actuator when the engine is on.
