I have a set of 265 70 r16s will they fit on my burb. if so what difference should i expect?

Difference to what ?
Standard for the pickup is 245/75/16 and optional is 265/75/16.
So if you put on 265/70/16 which is a little bit smaller in diameter to the 75 sidewall series your speedo should advance a little and your rpm at the same speed increase a little. Also you will lower your truck a little because of the smaller sidewall. That's all.

i probably have this wrong but, the number after the / is the ratio of width to sidewall hight. so by my calculations a 245/75R16 would have a 183.75 mm sidewall and a 265/70R16 would have a 185 mm sidewall height. theoretically this should lower engine rpms, and the speedo speed. will this have an effect on my mileage, or will that be counter acted by the wider tire?

That's right, but i meant 265/75 vs. 265/70 and in comparison to the 245.
In front of the 245 they will lower the rpm a little and minimal increase milage.
In front of the 265/75 they increase the rpm and decrease the milage.

I run a 245/85/16 it has the same rollout as a 275/75/16 with a smaller contact patch. IE:it looks like a forest service truck :D
